Ingredients
4cupschicken stock,good-quality
3fresh spinach
2cupschicken,shredded, cooked
14ozGreat Northern beans,or cannellini beans, rinsed and drained
⅓cuppesto
Parmesan cheese,grated, optional topping
Preparation
Stir together the chicken stock, spinach, chicken, beans in a medium saucepan.
Cook over high heat until the soup reaches a simmer.
Reduce the heat to medium, then stir in the pesto, and let the soup continue to simmer for 2 minutes.
Serve warm, topped with Parmesan cheese, and enjoy!
