Ingredients
1¼cupspanko bread crumbs
2tbspcornmeal
⅓cupparmesan cheese,grated
½tspdried basil
¼tspdried oregano
⅛tspcayenne pepper
1medium zucchini,cut into ¼-inch slices
1egg,beaten
Preparation
Preheat the air fryer to 375 degrees F.
Combine the bread crumbs, cornmeal, parmesan cheese, and seasonings in a small bowl.
Toss the zucchini with the beaten egg. Remove the zucchini from the egg, allowing excess to drip off, then dip into the breadcrumb mixture gently pressing to coat.
Place the zucchini in the air fryer in a single layer and cook for 8 minutes. Flip and cook an additional 6 to 8 minutes or until crisp and zucchini are tender. Repeat with remaining zucchini.
Serve with favorite sauce, and enjoy!
