2cupsall-purpose flour

Preparation

Combine all ingredients in a large mixing bowl. Using an electric mixer, whip the ingredients together for about 1 to 2 minutes until smooth and fluffy.

Preheat the oven to 350 degrees F. In a mixing bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. Set aside.

In a large mixing bowl, using an electric mixer, whip together the butter, granulated sugar, and light-brown sugar for about 3 to 4 minutes until light and fluffy. Add in the eggs, mixing after each addition.

With the mixer on low speed, add in applesauce. Stir in the flour mixture and mix until combined.

Divide the batter evenly among 20 paper-lined muffin cups, filling each cup about ⅔ full.

Bake in the preheated oven, rotating pan once halfway through baking. for about 19 to 20 minutes until the toothpick inserted in the center comes out clean. Allow cupcakes to cool for several minutes before transferring to a wire rack to cool.

Cool completely, then frost with Cream Cheese Frosting and sprinkle with pecans. Store cupcakes in an airtight container.
