Ingredients

4cupsarugula

1cupcherry tomatoes,halved

1cupcannellini beans,rinsed and drained

¼cupred onion,thinly sliced

½cupparmesan cheese,shaved

2tbsppine nuts,toasted

1tbspparsley,chopped

4tbspolive oil

2tbsplemon juice

1tspdijon mustard

Salt and pepper,to taste

Preparation

Place the arugula, cherry tomatoes, beans, onion, parmesan cheese, and pine nuts in a large bowl.

In a small bowl, whisk together the olive oil, lemon juice, mustard, salt, and pepper.

Pour the dressing over salad and toss to coat. Sprinkle with parsley and serve.
