Ingredients
½cupolive oil
1pcred bell pepper,seeded and chopped into big pieces
2tbspapple cider vinegar
1lime,juiced
2tbspAgave Nectar
¾inchpiece of fresh ginger,peeled and roughly chopped
1clovegarlic
¼tsptoasted sesame oil,(optional)
5bigstalks of kale
sea salt
raw red pepper
ginger salad dressing
½avocado,cubed
1pccarrot,peeled and sliced into strips
3tbsppurple cabbage,chopped
1tbspcilantro,roughly chopped
1tbspred onion,thinly sliced
1tspSesame seeds
Preparation
Simply blend all dressing ingredients thoroughly in a food processor or blender.
Pull the kale leaves off from the tough stem, and break into small, bite-sized pieces. Sprinkle with sea salt and massage the leaves for a couple of minutes,
Throw the kale into a bowl, drizzle in the salad dressing and toss thoroughly.
Add the avocado, carrots, cabbage, and red onion.
Top with cilantro and a big sprinkle of sesame seeds. Enjoy!
