Ingredients
⅓cupapple cider vinegar
⅓cuphoney
⅓cupDijon mustard
⅓cupmayonnaise
1tspsalt
½tspfreshly ground black pepper
½lemon,juiced
1pinchred pepper flakes
12ozspring mix greens
1fuji apple,sliced into very thin wedges
¾cupcrumbled Gorgonzola cheese
⅔cupwalnuts,roughly chopped
⅔cupdried cranberries
½red onion,thinly sliced
Preparation
Whisk vinegar, honey, mustard, mayonnaise, salt, pepper, lemon juice, and red pepper flakes together in a large bowl.
Chill dressing in the refrigerator for at least 2 hours before serving.
Layer spring mix, apple, Gorgonzola cheese, walnuts, cranberries, and red onion in a serving dish.
Toss with dressing and serve immediately.
