Ingredients
pinto beans,(1 can)
2jalapenos
½red onion
3tbspfresh lemon juice
2tbspextra-virgin olive oil
2tbspcilantro,chopped
salt
1hass avocado
tortilla chips,or shredded lettuce
Preparation
In a bowl, toss the beans, jalapenos, and onion with lemon juice, olive oil, and cilantro.
Season with salt.
Using a rubber spatula, gently fold in the avocado.
Serve the salad with chips or over lettuce.
