Ingredients
15oztunacanned in brine or olive oil
14ozchickpeasdrained
2largeavocadospeeled and pitted
2largevine ripened tomatoescut into wedges
1largecucumberhalved lengthways and sliced
½red onionsliced thinly
¼cupolive oil
2tbsplemon juicefreshly squeezed
1tbspfresh parsleychopped (plus extra to serve)
1tspminced garlic
¼tspsalt
Preparation
Whisk together dressing ingredients in jug or jar.
Mix together all of the salad ingredients in a large bowl. Toss with dressing.
Season with pepper and extra salt if desired.
