Ingredients
1avocado,peeled, pitted
1garlic clove,peeled
½small jalapeño
⅔cupfresh cilantro leaves,loosely-packed
3tbsplime juice,fresh
2tbspextra-virgin olive oil
2tbspred wine vinegar,or apple cider vinegar
½tspground cumin
¼tspKosher salt
¼tspblack pepper
½cupwater
Preparation
Combine the avocado, garlic, jalapeño, cilantro, lime juice, olive oil, red wine vinegar, cumin, salt, pepper, and ¼ cup of water in a blender or food processor. Puree until smooth.
Taste and season with extra salt and pepper, if needed.
Add a few extra tablespoons of water to thin out the dressing to desired consistency.
Serve immediately over salads, and enjoy!
