Ingredients

4cupsbaby red potatoes,cut in small pieces

½cupgreen bell pepper,finely diced

¼cupred onion,finely diced

3scallions,diced

1tspDijon mustard

1tbspextra virgin olive oil

1tbspred wine vinegar

1tbspreduced fat mayonnaise

salt and fresh pepper

Preparation

Boil potatoes in salted water for approximately 10 minutes until soft. Drain and let cool.

While the potatoes are boiling, combine red onion, green pepper, mustard, olive oil, vinegar, and mayonnaise. Season with salt and pepper.

Mix well and let the flavors marinate while the potatoes cook.

Once the potatoes are done and cool, mix into the bowl, then add scallions and salt and pepper to taste.

Serve room temperature or refrigerate until ready to serve.
