Ingredients

1pork tenderloin,cut into 8 to 10 2-inch portions

10bacon slices,thick cut

½tspkosher salt

¼tspground black pepper,coarse

Preparation

Preheat the oven to 400 degrees F.

Cook the bacon strips until half-cooked.

Wrap the medallions with a piece of bacon, then secure it with a toothpick.

Heat a cast iron skillet to high heat, then add the medallions.

Spoon over a bit of bacon fat onto each medallion.

Bake in the oven for 15 to 20 minutes. Remove toothpicks.

Serve warm, and enjoy!
