Ingredients
8cupscauliflower florets,chopped, ½ -inch pieces
1tbspReal California butter
2tspolive oil
¼cuponion,minced
3tbspflour
2cupsReal California milk,fat free
7ozReal California sharp cheddar,freshly grated, about 2 cups total
½tspsalt
Preparation
Preheat the oven to 400 degrees F.
Place 1 inch of water in a large pot with 1 teaspoon of salt, then bring to a boil.
Add the cauliflower, then cook for 6 to 7 minutes until tender crisp.
Drain and set aside in a large bowl.
Heat the butter and oil in a large saucepan over medium heat.
Add the onions, then cook for 2 minutes.
Stir in the flour.
Reduce the heat to low and cook, stirring continually for 3 to 4 minutes, to cook out the flour.
Add the milk and continue whisking for 2 minutes, raising heat to medium-high until it comes to a boil and becomes smooth and thick.
Season with ½ teaspoon salt and black pepper.
Once thickened, remove from heat completely.
Add the cheddar cheese, ¼ cup at a time, mixing well until the cheese is all melted.
Stir in the cooked cauliflower, then pour into a baking dish.
Bake for 15 to 20 minutes until bubbly and golden.
Broil for 2 minutes, or until the top is slightly browned.
Serve warm, and enjoy!
