Ingredients
12ozturkey breast,cooked, chopped fine
3potatoes,medium, peeled, cooked, and mashed
¾cupchicken broth
2tspolive oil
3garlic cloves
1onion,medium, chopped
½cupparsley,chopped
salt and fresh pepper
½cupseasoned whole wheat bread crumbs
1egg,whisked
olive oil spray
turkey gravy,leftover, optional
Preparation
In a large bowl, mash the potatoes with ¼ cup of broth, salt, and pepper. Set aside.
Sauté the garlic and onions in oil over low heat.
Add parsley, salt and pepper and cook for 2 to 3 minutes until soft.
Add the turkey and remaining broth, then mix well. Shut heat off.
Add the turkey to the mashed potatoes, then using clean hands, mix well.
Preheat the oven to 450 degrees F.
Measure ¼ cup of the mixture, then form into croquettes.
Place on waxed paper, then repeat with the remaining mixture.
Dip each croquette in the egg mixture, then breadcrumbs, then place them on a parchment lined cookie sheet.
Spray generously with about 1 tablespoon of olive oil.
Bake in the oven for 15 minutes, or until golden.
Serve with leftover turkey gravy, and enjoy!
