Ingredients

1small zucchini,sliced ½-inch thick

1red onion,cut into wedges

1bell pepper,cubed

8ozmushrooms,halved

1cupgrape tomatoes

2tbspolive oil

2tspbalsamic vinegar

1garlic clove,minced

1tbspfresh rosemary,chopped

salt and pepper,to taste

Preparation

Place the zucchini, red onion, bell pepper, mushrooms, grape tomatoes, olive oil, balsamic vinegar, garlic, rosemary, salt, and pepper in a large bowl and toss to combine.

Allow to marinate for at least 30 minutes or up to 8 hours.

Preheat grill to medium heat.

Remove vegetables from the marinade, then place them a grilling basket or on a grill mat.

Grill for 8 to 12 minutes or until cooked to desired doneness.

Serve immediately, and enjoy!
