Ingredients

1½cupsflour

1tspbaking soda

½tspsalt

¾tspcinnamon

⅓cupsugar

¼cupbrown sugar

½cupbuttermelted

2eggs

1tspvanilla

1cupbananasmashed, about 3 medium

½cupwalnutschopped, or pecans optional

Preparation

Preheat the oven to 350 degrees F.

Line a muffin pan with paper liners.

Whisk together the flour, baking soda, salt, and cinnamon in a small bowl. Set aside.

Combine the melted butter, sugar and brown sugar in a mixing bowl.

Add the eggs, vanilla, and mashed banana into the butter and sugar mixture, then mix well.

Add the dry ingredients and mix just until combined.

Fold in the walnuts.

Pour the mixture into the prepared muffin pan.

Bake for 18 to 20 minutes or until a toothpick comes out clean.

Cool on a baking rack.

Serve warm, and enjoy!
