Ingredients
12½ozpremium chunk chicken breast,(2 cans) drained, or 2 cups shredded chicken
¼cuplow fat mayonnaise
1cupfresh basil
1clovegarlic
¼cupparmesan,grated
2½tbspolive oil
salt and pepper,to taste
Hoagie Rolls croissants,or baguette bread
tomatoes
spinach
cheese,sliced
Preparation
In a medium sized mixing bowl, combine the chicken and mayonnaise until combined.
In a food processor pulse the basil, garlic, grated parmesan, and olive oil. Add salt and pepper to taste.
Combine the pesto to the chicken and mayonnaise until it is fully incorporated. Assemble on sandwich bread of choice and place desired toppings on the sandwich.
