Ingredients

1lbground beef

½yellow onionchopped

1green bell pepperchopped

1cupbarbecue sauce

15oztomato sauce

2cupscheddar cheeseshredded

½cupyellow cornmeal

½cupwhole milk

½cupflour

⅓cupwhite sugar

¼tspsalt

1tspbaking powder

1large egg

¼cupunsalted butter melted

Preparation

Preheat the oven to 400 degrees F.

Spray a 9×9-inch baking dish with cooking spray.

Combine the beef, onion and bell pepper in a large dutch oven on medium heat and cook for 5 to 6 minutes until browned, cooked through and fat has been drained.

Add in the barbecue sauce and tomato sauce, then bring to a boil before reducing to a simmer for 5 minutes.

Add the cornmeal, milk, flour, sugar, salt, baking powder, egg and butter to a bowl, then whisk well together.

In the baking dish, layer the beef mixture then the shredded cheese before topping with the cornbread mixture.

Bake for 30 to 35 minutes.
