Ingredients
1lbground beef,85/15
2tbspvegetable oil
1yellow onion,diced
1garlic clove,minced
1½cupsinstant white rice,or half cooked plain white rice
1cupwater
2cupstomato sauce
1cupbrown sugar,packed
½tspdry mustard
2tbspapple cider vinegar
1tbspWorcestershire sauce
½tspkosher salt
¼tspground black pepper,coarse
2cupsbeef broth
6bell peppers
¾cupcheddar cheese,shredded
Preparation
Preheat the oven to 350 degrees F.
Heat a large skillet on medium-high heat, then add in the beef and onions, breaking it apart as it cooks for 4 to 5 minutes.
Remove the beef from the skillet, then drain the fat.
Add the tomato sauce, brown sugar, mustard, vinegar, Worcestershire sauce, salt and pepper to the pan, then bring to a boil.
Removing 1 cup of the sauce.
Add in the garlic, rice, and water along with the ground beef back into the pan, then mix to combine.
Add 2 cups of beef broth along with the BBQ sauce reserved to the bottom of the baking dish.
Add the bell pepper halves to a baking dish, then fill with the mixture and top with cheese.
Bake for 45 minutes, wrapped tightly with foil.
Serve warm, and enjoy!
