Ingredients

3cupsquinoa,cooked,

2cupscheese,Colby Jack, shredded, 8 ounces, divided

2cupschicken,cooked, shredded

15ozblack beans,1 can, rinsed and drained

1cupcorn,whole-kernel, canned or frozen, then thawed

1¼cupsBBQ Sauce,plus extra for drizzling on top

cilantro,onions, avocado, sour cream, as optional garnishes

Preparation

Preheat oven to 375 degrees F.

In a large bowl or baking dish, stir together quinoa, 1½ cups cheese, chicken, black beans, corn and bbq sauce until combined.

Transfer the quinoa mixture to a baking dish and sprinkle the remaining cheese evenly on top.

Bake for 15 to 20 minutes, or until the cheese is melted and the casserole is warmed through. Remove from the oven, and drizzle the top of the casserole with a little extra bbq sauce, and top with desired (optional) garnishes.

Serve immediately.
