5lbsbeef chuck roast
2tbspcanola oil
2tspkosher salt
1tspcoarse ground black pepper
1tspdried thyme
1lbcarrots,peeled and cut into 2-inch chunks
2lbsyukon gold potatoes,peeled and cut into large chunks
1large onion,diced
2clovesgarlic,minced
1cupbeef broth
12ozbeer
¼cuptomato paste
Preparation
Preheat your oven to 325 degrees F.
Season the chuck roast with the Kosher salt, pepper and thyme.
Add the canola oil to a pan and heat. When it ripples and is hot, add in the roast and brown, deeply, for 4 to 5 minutes on each side (or if possible, brown in a slow cooker.)
Add carrots, potatoes, onion, garlic, beef broth, beer, and tomato paste, and cook for 3 to 3½ hours.
