Ingredients
1cupall-purpose flour,(125 grams) spoon & leveled
½tspbaking powder
⅛tspBaking Soda
½tspsalt
5tbspunsalted butter, melted,(⅓ cup or 75 grams)
1cuppacked light brown sugar,(200 grams)
1large egg
1egg yolk
1tsppure vanilla extract
½cupBiscoff spread,or Trader Joe’s Cookie Butter
1¼cupswhite chocolate chips,(225 grams)
Preparation
Preheat oven to 350 degrees F (177 degrees C). Line the bottom and sides of an 8-inch baking pan with aluminum foil or parchment paper, leaving enough overhang on all sides. Set aside.
In a medium-sized bowl, toss together the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, stir the melted butter and brown sugar together until combined. Whisk in the egg and egg yolk, then add the vanilla. Stir in the Biscoff spread.
Gently fold the dry ingredients into the wet ingredients. Be careful not to overmix. Fold in the white chocolate chips.
Spoon the batter into the prepared baking dish. Bake for 25 to 26 minutes.
Allow the blondies to cool completely for about 3 hours. Lift the foil or parchment out of the pan using the overhang on the sides and cut into bars.
