Ingredients

2cupsfresh corn,or canned, or frozen corn, defrosted and drained

19ozblack beans,canned, drained, rinsed

¾cuptomato,ripe, diced

1jalapeno pepper,seeded, finely diced

½cupred onion,finely diced

¼cupcilantro,chopped

3tbsplime juice,(about 1½ limes), fresh

1tbspolive oil

½tspcumin

salt,to taste

Preparation

Place the corn, beans, tomato, jalapeno pepper, onion, cilantro, lime juice, olive oil, cumin, and salt in a medium bowl and toss well to combine.

Refrigerate 1 hour.
