Ingredients

4cupsmixed salad greens

½cupmixed herbs,mint, dill, cilantro, basil, parsley

1cupblackberries

2apricots,pitted, sliced

2corn ears,cooked, kernels sliced off the cobs

3small yellow beets,or 2 large, roasted

¼cupfeta cheese,crumbled

¼cupalmonds,toasted, sliced

1large ripe apricots,or 2 small, pitted

2tbspolive oil

1tbspred wine vinegar

1tbsphoney

kosher salt and pepper,to taste

2tsppoppy seeds

Preparation

Combine the greens, herbs, blackberries, apricots, corn, beets, feta, and almonds to a large bowl.

Place the apricots, olive oil, vinegar, and honey in the bowl of a food processor. Puree to a smooth dressing.

Season to taste with kosher salt and pepper, then stir in the poppy seeds.

Pour the dressing over the salad, then toss gently to coat.

Serve, and enjoy!
