1lblarge shrimp,peeled and deveined

1tbspchili powder

1tsponion powder

1tspcumin

½tspgarlic powder

2tbspolive oil,divided

1cancorn

1canblack beans

2cupsbrown rice,cooked

2avocados,sliced

1avocado

¼cupcilantro,chopped

¼cupgreek yogurt

1garlic clove

3tbspolive oil,add more for smoother consistency

½tspsalt

¼tsppepper

Preparation

In a large bowl, add the shrimp, chili powder, paprika, onion powder, cumin, garlic powder, and salt and pepper.

In a medium sized skillet, add the olive oil and shrimp. Cook over medium high heat until no longer pink.

In a food processor, add the avocado, cilantro, Greek yogurt, garlic, olive oil and salt and pepper. Pulse until smooth. Add a little water if smoother consistency is desired.

Divide the shrimp, corn, black beans, rice, and avocado evenly. Drizzle with dressing.

Serve immediately and enjoy.
