Ingredients
¼cupolive oil
¼cupcanola oil
3½tbsplemon juice,fresh
1garlic cloves,minced
1tbspdijon mustard
1tsphoney
¼tspsalt,plus more to taste as desired
¼tspfreshly ground black pepper,plus more to taste as desired
1large romaine lettuce head
12ozbacon,cooked, crumbled
2medium avocados,diced
6ozfeta cheese,crumbled
12ozcherry tomatoes,or grape tomatoes, each sliced into 3 segments
½cupalmonds,slivered, toasted
2chicken breasts,grilled and sliced into strips, optional
Preparation
Add the oils, lemon juice, garlic, mustard, honey, salt, and pepper to a blender and pulse until well emulsified. Store in the refrigerator.
Add the lettuce, bacon, avocado, feta cheese, cherry tomatoes, almonds, and chicken to a large bowl or just layer on plates individually.
Toss with dressing just before serving. Enjoy!
