Ingredients
1⅓cupfresh blueberries,or frozen (do not thaw)
2cupsflour,plus 1 tbsp
2tbspsugar
1½tspbaking powder
½tspbaking soda
½tspsalt
1½cupsbuttermilk
2eggs,separated
⅓cupbutter,melted
¼tspalmond extract,or 1 tsp vanilla extract
Preparation
Preheat the waffle iron according to manufacturer’s directions. Toss the blueberries with 1 tablespoon of flour and set aside.
Combine the flour, sugar, baking powder, baking soda, and salt in a medium bowl.
In a separate bowl, mix the buttermilk, egg yolks, butter, and extract. Set aside.
Place the egg whites in a stand mixer and beat on medium-high speed until stiff peaks form.
Add the egg yolk mixture to flour mixture and stir to combine. Fold in the egg whites, then the blueberries.
Grease the waffle iron and drop the batter, close the lid, and cook for about 3 to 5 minutes or until golden.
Serve warm with maple syrup or butter, and enjoy!
