Ingredients
1head broccoli
½ small white oniondiced
2clovesgarlicminced
salt and pepperto taste
1cupwater
2tbspbutter
1cupwhite cheddarshredded
1cupGreek yogurt
Preparation
In a pan on medium heat, sauté onion in oil until translucent. Add garlic, salt, and pepper and saute.
Add 1 cup of water, add broccoli pieces, and if needed, add more water to ensure broccoli is covered.
Cook for 8 minutes or until broccoli starts to soften.
Blend the mixture well using an immersion blender, add butter, and stir to melt.
Season and garnish to taste. Serve warm alongside toasted sourdough bread.
