Ingredients

2tbspcooking oil

2onions,cut into thin slices

¾tspturmeric

1½lbsbroccoli,(about 2 large stalks), stem peeled and cut crosswise into ¼-inch slices, tops cut into florets

1cupdiced tomatoes,(from 1 15 oz can), drained

⅓cupwater

¾tspsalt

Preparation

In a large, deep frying pan, heat the oil over moderate heat. Add the onions and cook, covered, stirring occasionally, for 5 minutes. Uncover and cook, stirring occasionally, for about 5 minutes longer until the onions are very soft.

Stir in the turmeric to coat the onions. Stir in the broccoli, tomatoes, water, and salt and bring to a simmer. Reduce the heat and simmer, covered, for about 10 minutes until the broccoli is tender.

Serve and enjoy.
