Ingredients
1cupbrown rice,uncooked, brown jasmine, basmati or short grain works well
1cuplite coconut milk
1¼cupswater
1tspfresh ginger,grated
1garlic clove,crushed
¼tspsalt,or more to taste
2tbspsweetened coconut,grated
3tbspcilantro
Preparation
In a medium sized heavy pot, add coconut milk, rice, water, ginger, garlic, salt and coconut; bring to a bowl over medium heat.
Reduce heat to low, cover, and simmer for about 40-45 minutes until all liquid evaporates.
Remove from heat. Keep covered for about 10 minutes.
Fluff with a fork; toss with cilantro.
