Ingredients

1cupshort grain brown rice,uncooked

Cooking spray

1large egg,scrambled

1egg white,scrambled

4large scallions,chopped

2garlic cloves,minced

1tomato,chopped

2tspsoy sauce,or more to taste

1tspfish sauce

Preparation

Cook the brown rice according to package directions.

When the rice is cooked, spray a heated nonstick wok with spray oil, then add the eggs.

Cook for 1 to 2 minutes until done. Set aside.

Spray more oil on the wok, then add the scallions, tomatoes and garlic.

Sauté for 1 minute, then add the rice.

Add the soy sauce and fish sauce, then stir to mix.

Keep stirring for a few minutes, then add the cooked scrambled eggs.

Mix well for another 30 seconds.

Serve warm, and enjoy!
