Ingredients
2lbspork lointrimmed of excess fat
4garlic clovesminced
4tbspbrown sugar
1tbspcanola oil
2lbscarrotspeeled and sliced
2lbspotatoesscrubbed and cut into 1 inch chunks
¼cupcanola oilfor vegetables
salt and pepper to taste
Preparation
Preheat oven to 375 degrees F.
Mix ¼ cup of canola oil, salt, pepper, carrots and potatoes in a bowl.
Mix 1 tbsp of canola oil, brown sugar, garlic in a bowl, then rub the mixture over the pork loin.
On one large cookie sheet, put down some foil before adding the carrots and potatoes.
Spread apart the vegetables to make an opening in the pan.
Add the pork in the middle of the pan.
Roast the pork and vegetables for 40 to 50 minutes, or until a meat thermometer registers at 150 degrees F in the center of the roast.
Remove the pork and place it onto a plate or cutting board to let it rest. Cover the pork with a piece of foil.
Let the pork rest for 5 to 10 minutes, then remove the vegetables from the oven.
Serve brown sugar pork with vegetables warm, and enjoy!
