Ingredients

½cupbutter
1tspgarlic powder
½tspparsley
fresh coleslaw
ranch,or bleu cheese dressing, to taste
1½cupsbuffalo hot sauce
½cupPanko bread crumbs
¼cupbuffalo hot sauce
⅓cupcelery,diced
2tbsponion,minced
1egg,separated
pepper,to taste
1lbchicken,ground
2eggs
2tspflour
2tbspmilk
2cupsPanko bread crumbs
Preparation
Preheat the oven to 400 degrees F.
Pour 2 cups of bread crumbs into a bowl.
In a separate bowl, combine 2 eggs, 1 egg yolk, milk, and flour. Whisk until smooth and set aside.
In a small bowl, combine ½ cup bread crumbs, hot sauce, celery, onion, and the reserved egg white. Add the ground chicken and mix until combined.
Divide into 18 equal pieces and roll into balls. Roll each ball in the Panko crumbs, dip into the egg mixture, and roll in the Panko crumbs again.
Place on a rack and bake for 25 minutes.
Open the Cobblestone Bread Co. White Grinder Sub Rolls and spread butter on each. Sprinkle with parsley and garlic powder.
Broil for about 3 to 4 minutes or just until lightly toasted.
Place fresh coleslaw on each roll.
Toss the meatballs, a few at a time, in the heated buffalo sauce. Place 3 meatballs on each White Grinder Sub Roll and drizzle with dressing.
Garnish with a sandwich pick.
