Ingredients

12ozMexican chorizo,crumbled

1medium onion,chopped

2large potatoes,peeled and cut into small cubes

¼cupwater

1clovegarlic,crushed

8flour tortillas,warmed

Preparation

Combine chorizo and onion in a large skillet over medium heat. Cook and stir for about 5 minutes until the onion is soft.

Add potatoes, water, and garlic. Stir well. Cover and reduce heat to medium-low.

Cook for about 25 minutes, stirring every 10 minutes, until potatoes are tender.

Remove from heat and spoon into warm tortillas.
