Ingredients

1½cupsbrown sugar,packed

4tbspcornstarch

3tbspall purpose flour

2cupsmilk

3egg yolks

2tbspbutter

1tspvanilla extract

1pie shell,(9-inch), baked

3egg whites

½tspcream of tartar

½cupwhite sugar

1tspvanilla extract

Preparation

In a double boiler, whisk together the brown sugar, flour, and cornstarch. Add just enough milk to make a paste.

Mix in the beaten egg yolks to the flour mixture, and then add the remainder of the milk. Cook slowly for 30 to 45 minutes, stirring constantly. When thick, remove from heat.

Add butter or margarine and vanilla. Stir constantly until well blended.

When the mixture is slightly warm, pour the filling into the baked pie shell.

In medium mixing bowl, beat egg whites until stiff. Beat in the cream of tarter, white sugar, and teaspoon vanilla. Spread the meringue over the pie filling.

Bake at 375 degrees F for 12 to 15 minutes until meringue peaks turn a golden brown.
