Ingredients

2cupsbutter,softened

1cuppowdered sugar

lemon zest,(from 1 lemon)

lemon juice,(from 1 lemon)

4cupsflour,plus extra for surface when rolling the cookies

½tspsalt

½tspbaking powder

3tbsplemon juice

1cuppowdered sugar

Preparation

Preheat the oven to 350 degrees F.

In a stand mixer or using a hand mixer, add the butter and beat until fluffy.

Add in the powdered sugar, zest of 1 lemon, and juice of 1 lemon.

In a medium-sized bowl, combine the flour, salt, and baking powder.

Slowly add it to the butter mixture and mix until combined.

Add the dough to a lightly floured surface and roll it out to ¼-inch thick.

Using a round cookie cutter, cut out the cookies and lay them onto a baking sheet.

Bake for 10 to 12 minutes or until lightly brown.

Remove and let cool.

In a small bowl, whisk the lemon juice, powdered sugar, and zest of 1 lemon.

Dip the top of each cookie into the glaze and place it on a wire rack to set.
