Ingredients
12Roma tomatoes,ripe
salt
1tspthyme,fresh
1tsporegano,fresh
olive oil spray
2tbspbasil,fresh, chopped
Preparation
Preheat oven to 325 degrees F.
Slice the tomatoes in half.
Season with salt, basil, oregano, and thyme.
Spray a cookie sheet with olive oil spray and place the tomatoes, cut-sides up.
Bake for 2 hours until the skin gets wrinkled and crusty on the bottom, and moist in the center.
Puree the tomatoes in a food processor.
If it is too thick, you can thin it with pasta water.
Serve over your favorite high fiber pasta and grated cheese.
