Ingredients

3large tomatoes,ripe, chopped

8ozsmall mozzarella balls,fresh, halved

10medium basil leaves,chopped

1garlic clove,minced

2tbspparsley,fresh, chopped

2tbspextra virgin olive oil

2tspred wine vinegar

salt and pepper

1large baguette,or Italian bread, sliced 1-inch thick

1large garlic clove,fresh, minced

Preparation

Combine the tomatoes, basil, parsley, mozzarella, olive oil, red wine vinegar, garlic, and a dash of salt and pepper.

Allow to sit at room temperature.

Place the bread slices under the broiler for 1 to 2 minutes or until the bread is very lightly toasted.

Immediately after removing the bread from the oven, rub the garlic clove over each slice.

Top the bread slices with ¼ cup of the tomato and mozzarella mixture.

Serve, and enjoy!
