Ingredients
2cupsold-fashioned oats,or gluten-free oats
1cupcarrots,grated or shredded
1cuppecans
1cupwalnuts
½cupcoconut,shaved or shredded, optional
¼cupmaple syrup
¼cupcoconut oil,melted
1tspground cinnamon
½tspsalt
¼tspground ginger
⅛tspground nutmeg
cloves,pinch, optional
½cupraisins
Preparation
Heat oven to 350 degrees F.
Add the oats, carrots, pecans, walnuts, coconut, maple syrup, coconut oil, cinnamon, salt, ginger, nutmeg, and cloves together in a large mixing bowl. Toss well until combined.
Spread the mixture out evenly on a baking sheet.
Bake for 25 minutes, pulling the mixture out at the halfway point and giving it a good stir before the final round of baking.
Remove, then let cool until the granola reaches room temperature.
Add raisins, then toss to combine.
Serve, and enjoy!
