½cupbrown sugar
2eggs
1tsplemon juice
1¼cupsall-purpose flour
1tspbaking powder
½tspbaking soda
½tspsalt
2cupscarrotsgrated
Preparation
Preheat the oven to 350 degrees F (175 degrees C).
Lightly grease a 9-inch ring mold.
In a medium bowl, cream together the butter and brown sugar.
Blend in the eggs and lemon juice.
Gradually mix in the flour, baking powder, baking soda, and salt.
Fold in the carrots.
Transfer the mixture to the prepared ring mold.
Bake for 40 minutes in the preheated oven, until a knife inserted in the center comes out clean.
