Ingredients

½cuphoney,or agave, warmed

2tbspcoconut oil,melted and hot

½tspvanilla extract

½tspalmond extract

4cupsold-fashioned oats,or gluten-free oats

2cupsnuts,like half almonds, half pecans

1cupcoconut,shredded

2tspground cinnamon

1tspground cardamom

1tspground ginger

¼tspallspice

¼tspblack pepper

¼tspground cloves

¼tspsalt

Preparation

Preheat the oven to 300 degrees F.

Line a large baking sheet with parchment paper or aluminum foil.

In a small mixing bowl, whisk together the warmed honey, coconut oil, vanilla and almond extracts until combined. Set aside.

In a large mixing bowl, toss together oats, nuts, coconut, ground cinnamon, cardamom, ginger, allspice, black pepper, ground cloves, and salt until evenly combined.

Add in the honey mixture, then toss until the dry ingredients are evenly coated.

Spread the mixture out on the prepared baking sheet in an even layer.

Bake for 20 minutes, removing the sheet from the oven at the halfway point to give the granola a good stir.

Return the sheet to the oven and bake for an additional 5 to 10 minutes, or until the nuts are toasted.

Remove sheet from oven, then allow to cool on a wire rack.
