Ingredients

3½cupwater

1tspsalt

¾cupold fashioned grits

¼lbcheddar cheese

1tbspcooking oil

1lbturkey sausages

1½lbtomatoes

¼tspfresh ground black pepper

2tbspfresh parsley,chopped

Preparation

In a medium saucepan, bring the water and ¾ teaspoon of salt to a boil. Add the grits in a slow stream, whisking.

Reduce the heat, cover, and simmer, stirring frequently with a wooden spoon, for about 20 minutes, until the grits are very thick. Remove the saucepan from the heat and stir in the cheese.

In a medium, nonstick frying pan, heat the oil over moderately low heat. Add the sausages and cook for about 15 minutes, until they are just done. Remove the sausages from the pan.

Add the tomatoes, the remaining ¼ teaspoon of salt and the pepper to the pan. Cook for 1 to 2 minutes, until the tomatoes are just heated through. Stir in the parsley.

Serve the grits topped with the sausages and the tomato sauce, and enjoy!
