Ingredients
6bacon slices,cooked and crumbled, or chopped to bits
2lbsrusset potatoes,scrubbed and rinsed, cut into ¾-inch cubes
2½tbspolive oil
½tspsea salt,plus more to taste
½tspfreshly ground black pepper
4ozcheddar cheese,medium or sharp, shredded
2green onions,chopped
light ranch dressing
Preparation
Preheat the oven to 400 degrees F. Spray a rimmed baking sheet with non-stick cooking spray.
In a large mixing bowl, toss the potatoes with olive oil, salt, and pepper. Spread them onto the prepared baking dish.
Bake in the oven for 20 minutes, then remove from the oven and toss. A thin metal spatula works best to flip and to break the few potatoes that stick away from pan.
Return to the oven to bake. After 20 minutes, remove and toss again.
Return to the oven, then bake for 15 minutes longer, or until golden and the edges are crisp.
Move the potatoes closer to center, then sprinkle evenly with cheddar.
Return to oven, then bake for several minutes longer just until cheese has melted.
Remove from the oven, drizzle with ranch dressing, and top with bacon and green onions. Serve, and enjoy!
