Ingredients
2 cups cooked rice
2 eggs
2/3 cup milk
2 cups parmesan cheese, grated
Salt and pepper, to taste
2 tbsp. butter
8 oz. baby bella mushrooms, sliced
1 tsp. garlic, minced
Preparation
Combine the rice, milk, eggs, and 1 cup of cheese in a large bowl. Add salt and pepper to taste.
In a large skillet over medium heat, melt 1 tbsp of butter. Add in the onions and cook until the onions are clear.
Add the mushrooms and cook for another 5 minutes. Add in the garlic and season with salt and pepper.
Stir the mushroom mixture into the rice mixture, making sure everything is well distributed. Spoon the mixture into lightly greased ramekins.
Top each dish with the remaining cheese (adding more if desired), then bake at 375 degrees for about 25 minutes. Serve.
