Ingredients

4large tomatoes

salt and pepper

½lbground sausage

1cupwhite rice,cooked

1½cupColby Jack cheese,shredded and divided

½cupparmesan cheese,shredded

2tbspbasil,chopped

1tspItalian seasoning

Preparation

Preheat oven to 425 degrees F. Start by cutting off the tops of the tomatoes. Cut around the edge of the tomatoes and scoop out the insides and place in a baking dish.

In a medium sized skillet cook and crumble the sausage. Remove grease and add to a medium sized bowl with the rice, one cup colby jack cheese, parmesan cheese, basil and Italian seasoning.

Use the mixture and stuff each tomato. Top with remaining cheese. Bake for 15 to 20 minutes.
