Ingredients

1tbspolive oil

1largeonion

1clovegarlic,minced

8cupslow sodium chicken broth,or homemade

1½cupscarrots,chopped

3stalkscelery,chopped

14.5ozlow sodium diced tomatoes,canned, lightly drained

¾cuppearl barley

2½cupschicken,cooked

2bay leaves

1tsppoultry seasoning

½tspdried thyme

3tbspfresh dill

3tbspfresh parsley

Preparation

Heat olive oil over medium heat in a large pot. Add onion and garlic and cook until slightly softened. Add remaining ingredients except for fresh herbs.

Bring to a boil and let simmer uncovered for 1 hour or until barley is tender.

Discard bay leaves and stir in fresh herbs.
