4tbspbutter,melted

1tbspchili powder

1tspground cumin

½tspgarlic powder

¼tsponion powder

1tspsalt

¼tsppepper

4ozchicken breasts,boneless skinless

2cupsbell peppers,sliced, any color

1canblack beans,drained and rinsed

½cuponion,sliced

1cupcheddar cheese,shredded

2tbspcilantro,chopped

avocado

Preparation

In a small bowl, mix together the chili powder, cumin, garlic powder, onion powder, salt, and pepper.

Preheat the oven to 400 degrees F or a grill to medium-high heat.

Divide the chili powder, cumin, garlic and onion powder, salt, and pepper mixture in half. Place half of the seasoning in the melted butter, then stir to combine.

Coat 4 large squares of foil with cooking spray. Place a chicken breast in the middle of the foil, then season with the remaining spice mixture.

Arrange the peppers, onion, and beans around the chicken. Drizzle 1 tablespoon of the butter over the chicken and vegetables.

Fold the foil around the chicken mixture to close completely.

Bake the foil packets for 40 minutes or grill for 35 minutes.

Carefully open the foil packets, then sprinkle the cheese over the chicken and vegetables. Return the packets to the grill or oven for 2 to 3 minutes or until the cheese is melted.

Sprinkle with cilantro, then add sour cream and avocado. Slice the chicken, serve with tortillas on the side, and enjoy!
