Ingredients

6flour tortillas

¼cupoilgarlic-flavored, or as needed

2tbspolive oil

1tbspwhite onionfinely chopped

6ozgrilled chicken strips2 packages, chopped

2tbspFajita seasoning

1large avocadofinely chopped

3small Roma tomatoesseeded and diced

2tbsplemon juice

5garlic clovesminced, or to taste

Preparation

Preheat the oven to 350 degrees F (175 degrees C).

Cut each tortilla into 6-inch squares using a pizza cutter.

Cut each 6-inch square into four 3-inch squares, making 24 total.

Cut a 1-inch slit from each corner using kitchen scissors.

Brush the garlic oil over both sides of the tortilla squares.

Press the squares into a mini muffin tin to create small, pointed tortilla cups.

Bake in the preheated oven for 8 to 10 minutes until golden brown.

Heat 2 tablespoons of olive oil in a pan over medium-high heat.

Saute the onion for 3 to 5 minutes until tender.

Add the chicken and fajita seasoning, then stir until blended.

Remove from heat, then let cool for about 20 minutes.

Combine avocado and tomatoes in a mixing bowl.

Add lemon juice and garlic, then stir to blend.

Add the cooled chicken mixture, then mix until blended.

Spoon the mixture into the tortilla cups.

Serve at once, and enjoy!
