15ozchickpeas,rinsed, drained

6large eggs,hard boiled, sliced crosswise

kosher salt and black pepper,to taste

2tbspred onion,chopped

2tbspextra virgin olive oil

2tbspapple cider vinegar

1tbspfresh cilantro,or parsley, chopped

Preparation

Toss the chickpeas, hard boiled eggs, salt, pepper, onion, olive oil, vinegar, and cilantro in a medium bowl.
