Ingredients
½cupscucumbers,diced, partially peeled
1cuptomato,seeded, diced
¼cupred onion,diced
2tbsplemon juice,fresh
½tbspfresh parsley,minced
1tbspextra virgin olive oil
½tspkosher salt and pepper,to taste
15ozchickpeas,1 can, rinsed and drained
Preparation
Combine the cucumbers, tomato, onion, lemon juice, parsley, olive oil, salt, pepper, and chickpeas together. Toss well.
