Ingredients

½cupsalsa

½cupGreek yogurt

2tspcanola oil

1canchickpeas,drained and dried in a paper towel

½tspcumin

½tspdried oregano

1pinchcayenne pepper

6cupslettuce,chopped

1cupgrape tomatoes

1cupcorn

½cupolives,sliced

1½avocado,diced into ½ inch chunks

Preparation

In a small bowl, mix the salsa and Greek yogurt, then set aside.

Add the oil to the pan on medium high. Add the chickpeas, stir, add the cumin, oregano and cayenne pepper, then stir for 45 seconds. Remove from pan to paper towel.

Add the lettuce, tomatoes, corn and olives to a large bowl and toss. Top with the seasoned chickpeas and avocado chunks.

Pour over the salad dressing, serve, and enjoy!
